Aimee's Fajitas Recipe

quick and easy, and fresh! Yummy fajita filling. Substitute portabella mushroom for chicken for vegetarian version.

Ingredients
  • 20 ozs. chicken breast
  • 1 clove garlic, minced
  • 1 small red bell pepper, sliced
  • 4 celery stalks, sliced
  • 1 tsp. oregano
  • 1/2 tsp chili powder
  • 1 tbsp olive oil

Directions: slice chicken into strips about 1/4 in. chick, and 1 1/2 long. heat oil and garlic over medium heat. When garlic begins to bubble, add chicken, oregano, and chili powder and sautee until outside of chicken is no longer pink. add celery and cook for about 3 minutes, tossing frequently. add red bell pepper and sautee for about a minute longer, or until bell pepper is tender, but still crisp. (or until desired tenderness is reached. serve immediately with warm tortillas.
