Aivar Recipe
Ovaj je recept već godinama u mojoj obitelji i moja je baka uvijek radila po njemu, a posljednjih godina taj sam posao naslijedila ja. Iskušan je bezbroj puta do sada.

Ingredients
  • 8 kg red pepper
  • 3 kg eggplant
  • 100 ml vinegar
  • 1/2 l oil
  • 3 tbsp salt
  • 3 tbsp sugar
  • 1/2 cup cayenne pepper

Directions: 1. Ispeći papriku (za pravi ajvar paprika se ne kuha), po mogućnosti na žaru, ali dobro je i u pećnici. Ispeći i patliđan (kažu da u nekim dijelovima Makedonije ne stavljaju patliđan u ajvar, a u nekima stavljaju; meni se više sviđa sa patliđanom, a on i upije ulje, pa bude kremasto, a ne masno). 2. Ostaviti u poklopljenoj posudi da se ohladi. Ili staviti u najlonsku vrećicu, da se kasnije lakše guli. 3. Oguliti i papriku i patliđan. 4. Pustiti preko noći u cjedilu da se dobro iscijedi. 5. Samljeti na mašinu za mljevenje mesa ili u multipraktiku. 6. Staviti kuhati, te dodati sol (ja volim da je ajvar umjereno slan, dok neki kažu da treba biti neslan jer se u izvornom obliku jede sa slanim sirom), šećer, ocat i ljutu papričicu. Obratite pozornost na to da su kod ljute paprike najljuće upravo sjemenke. Tako da vam ljutina ovisi o tome koliko ćete sjemenki dodati. Isto tako trebate znati da vam je ajvar puno ljući dok je topao, nego kad se ohladi. Tako da ako vam je malo ljuto dok je toplo, kasnije ćete dobiti blagi ajvar. Imati pri ruci poklopac ili nešto slično, jer jako šprica dok se kuha. 7. Kad je zakuhalo, dodati i ulje. Ajvar se ovako treba peći barem 2 sata! 8. Pred kraj pečenja ajvara, oprane staklenke staviti u pećnicu na 150 stupnjeva, te ih grijati barem pola sata. 9. Vrući ajvar stavljati u vruće staklenke, te ponovno vratiti u pećnicu. Kad se napravi tanka korica, izvaditi iz pećnice. Pustiti da se malo ohladi i u svaku staviti malo ulja. Tek toliko da prekrije površinu. 10. Kad se ohladilo, prekriti celofanom i staviti poklopac na staklenku.
