Baked Oatmeal Recipe

Delicious apple, cinnamon, and blueberry oatmeal cakes.

Ingredients
  • 2 cups oatmeal
  • 1 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 cup sugar (half if using sweetened soy milk/yogurt)
  • 1 tsp vanilla
  • 1 apples, peeled and shredded
  • 3/4 cup soy milk
  • 1/2 cup blueberries

Directions: Mix wet ingredients into dry ingredients, add blueberries. Drop into a 12-cup muffin pan (or 8x8 cooking pan), sprayed. Bake at 350 for 30 minutes, but turn broiler on high for the last 5 minutes to crisp tops. Cool and serve.
