Chicken Cordon Bleu Recipe

Unbreaded Chicken Breasts stuffed with ham and swiss cheese and covered in a Cream of Mushroom sauce.

Ingredients
  • 16 oz Boneless Skinless Chicken Breasts (about 4)
  • 4 oz Sliced Swiss Cheese (about 4 slices)
  • 170 g Oscar Mayer Smoked Deli Ham (4 slices)
  • 1 1/4 cups Healthy Request Cream of Mushroom Soup (1 can)
  • 3/4 cup Skim Milk
  • 1 cup sliced Mushrooms
  • 1 tsp Black Pepper

Directions: Preheat oven to 375d. Spray a large baking dish with nonstick cooking spray. Place each chicken breast between 2 sheets of plastic wrap and pound with a meat mallet until chicken is about 1/2"-3/4" thick. Place 2 slices of ham and 1 slice of swiss cheese on each chicken breast and roll up. Secure with a toothpick. Bake for 40-50 minutes or until chicken is cooked through. As chicken finishes cooking, mix soup, black pepper, and milk in a saucepan. Stir in Mushroom slices Mix and heat thoroughly - stirring occassionally. Serve sauce over chicken.
