Chicken and Sweet Potato Stew Recipe

Ingredients
  • 16 oz. chicken breasts boneless , skinless cut into bite-sized pieces
  • 2 medium sweet potatoes , peeled and cubed
  • 2 medium Yukon Gold potatoes, peeled and cubed
  • 2 medium carrots, peeled and cut into 1/2-inch slices
  • 28 oz whole stewed tomatoes
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/8 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1 tsp paprika
  • 1 tsp celery seed
  • 1/4 cup fresh basil, chopped
  • 1 cup low sodium chicken broth , nonfat

Directions: Combine all ingredients in the slow cooker. Cover; cook on Low for 6 to 8 hours or on High for 3 to 4 hours.
