Corn Bread Casserole Recipe

A holiday and potluck favorite, this corn casserole is a family tradition.

Ingredients
  • 1 box corn bread mix
  • 1/3 cup margarine, melted
  • 2 eggs, beaten
  • 1 can corn, sweet
  • 1 can creamed corn
  • 1 cup light sour cream
  • 1/2 cup cheddar cheese, shredded

Directions: Preheat oven to 350 degrees. In a large mixing bowl, combine all ingredients except the cheese. Mix well. Grease a 9x13 baking pan. Add cornbread mixture to pans and bake for 40 minutes or until a toothpick inserted into the center of the pan comes out clean. If desired, sprinkle shredded cheddar on top of corn bread casserole during last 10 minutes of cooking.
