Creamy Cheese & Chicken Rotini

Ingredients
  • 1 pkg (375g) Whole Wheat Rotini
  • 500 ml (2 cups) red pepper, sliced
  • 1 (250 g) Cream Cheese
  • 250 ml (1 Cup) 1% Milk
  • 2 ml (1/2 tsp) salt and pepper
  • 500 ml (2 Cups) baby spinach
  • 10 ml (2 tsp) lemon juice
  • 1 cup Parmsean Cheese, Grated
  • 8 oz Chicken Breasts

Directions: Prepare rotini according to package directions. Add red peppers during the last minute of cooking. Stir cream cheese, milk, salt and pepper in a saucepan over medium heat. Cook,stirring often for 5 minutes or until smooth and bubbly. Toss hot rotini with spinach, lemon juice, chicken and cream cheese sauce. Service with Parmsean cheese.
