Curried Lentils and Barley Recipe

madras curry paste with lentils and barley

Ingredients
  • 1/2 c lentils, dry
  • 1/2 c barley, dry
  • 1/2 c peppers, sweet
  • 3/4 c carrot, chopped
  • 1/4 c onion, sweet
  • 1 tsp olive oil

Directions: saute carrot, onions and peppers in olive oil for 5 min. Add ginger and garlic, saute 1 min. Add curry powder and cumin. Add lentils and barley, then 1-2 cups of water and salt. Simmer until done.
