Curried Sweet Potato and Black Bean Soup Recipe

A doctored version of Food Network's Simple Curried Sweet Potato Soup.

Ingredients
  • 2 onions, chopped
  • 2 garlic cloves, chopped
  • 1 1/2 lb sweet potatoes, peeled and chopped
  • 1 tsp coriander
  • 6 cups low sodium chicken broth
  • 1 tbsp curry powder
  • 28 oz black beans
  • 1 tbsp butter

Directions: Sweat 2 chopped onions, 4 chopped garlic cloves, 3 peeled and cubed sweet potatoes (about 1 1/2), 1 tsp coriander, and 1 tbsp curry powder in butter. Simmer with 6 cups chicken broth until soft. Puree.
