Dr. Fife's Coconut Oil Mayonnaise Recipe

Ingredients
  • 2 egg yolks
  • 2 T lemon juice
  • 1/2 T Dijon mustard
  • 1/8 tsp paprika
  • 1/8 tsp salt
  • 1/4 cup olive oil
  • 1 cup coconut oil

Directions: Blend everything but the coconut oil for 60 seconds. With machine running, very slowly pour in 1 cup coconut oil. Mayonnaise thickens as the oil is added. Be sure to add the oil slowly, pouring in a thin stream. Taste for seasoning and adjust as needed. Store in fridge.
