Hearty Lentil Soup (Ada) Recipe

Adapted from the American Diabetes Association. lean smoked pre-cooked turkey sausage (Kielbasa), celery, onion, carrot, water, chicken broth, canned diced tomatoes, dried lentils, salt, ground black pepper, bay leaf cvt

Ingredients
  • 14 ounces lean smoked pre-cooked turkey Kielbasa , sliced (102023)
  • 1 cup celery, diced
  • 1 medium onion, diced
  • 1 carrot, diced
  • 3 cups water
  • 14 1/2 ounces (fat-free, reduced-sodium) chicken broth (105273)
  • 29 ounces (canned) diced tomatoes (82687)
  • 1 cup dried lentils
  • 1 tsp ground black pepper

Directions: Coat a large soup pot with cooking spray. Over medium-high heat, saute sausage until lightly brown. Remove from pan. Add celery, onion, and carrots to pot and saute over medium-high heat for approximately 4 minutes. Add the sausage, one bay leaf and all remaining ingredients. Bring to a boil; reduce heat and simmer for 1 hour. Remove bay leaf and serve.
