Mexican Cassrole Recipe

Ingredients
  • 12 corn tortillas, yellow
  • 10 oz corn, sweet, yellow, frozen
  • 15 oz refried beans, vegetarian
  • 15 oz enchilada sauce
  • 16 oz salsa, mild
  • 2 cups chedder cheese, shredded
  • 4 cups kale, chopped
  • 2 large carrots, sliced

Directions: Mix together corn, refried breans, and half the cheese, and salsa, and 2 tbsp enchliada sauce in a bowl. Layer a baking dish with tortillas, spread bean mixture, layer with and enchilada sauce and tortillas. Top with crushed tortilla chips and 1/2 cup of cheese. Bake at 375 for 40 minutes. Serve with salad, and salsa on the side.
