Minestrone Recipe

Rich, delicious, hearty soup

Ingredients
  • 28 oz. crushed tomatoes
  • 4 cups chicken stock
  • 1 cup cabbage, shredded
  • 1 cup carrots, sliced
  • 1 cup onions, diced
  • 1 cup lima beans
  • 1 1/2 cup zucchini, sliced
  • 1/2 cup spinach
  • 1/2 cup barley, uncooked
  • 1/2 tsp. salt
  • 1 tsp. olive oil
  • 1 tbsp. dried parsley
  • 1/2 tbsp. dried Italian herbs
  • 2 cloves garlic, minced
  • 1/2 cup celery, sliced

Directions: saute onions and garlic in oil until tender. add liquids. bring to boil. add remaining ingredients. simmer 50 minutes.
