Orange Chicken Recipe

Chicken cooked in orange juice served over rice with a side of peppers.

Ingredients
  • 3 boneless skinless chicken breasts, chunked
  • 2 cups orange juice (high pulp sticks better, but any kind is fine)
  • 1/2 tablespoon soysauce
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 tsp. minced garlic
  • 1 large green bell pepper, cut in long strips
  • 2 cups minute rice

Directions: Cut chicken into chunks. Place in skillet over medium high heat. Add a cup of orange juice. Mix in salt, pepper, garlic and soy sauce. As chicken cooks and oj cooks down, it will stick to chicken. Add more oj as needed until chicken is cooked through or tender. In seperate pan, add green pepper slices, 2-4 tbs oj, splash of soy and splash of garlic juice. You want peppers to remain crispy, not become soft. The "sauce" should brown/carmelize onto peppers. Add more oj if needed. Do not burn them. Cook on med. high/high heat, but keep an eye on it. Make rice. In bowl or dish, put a layer of rice on bottom. Top with chicken and some of the oj sauce (should be thick). Top with peppers or place on side.
