Ingredients
  • 2 small zucchini
  • 1 medium yellow onion
  • 1 orange bell pepper
  • 2 tbsp extra virgin olive oil
  • 2 pinch salt
  • 1 clove garlic
  • 1/2 tsp dried parsley
  • 1 tsp lemon juice

Directions: cut veggies season zucchini, onion & bell pepper with the rest of ingredients. roast in oven until desired consistency
