Tuna and Garbanzo Bean Salad Recipe

This tuna salad gets a nutritional "A" from CalorieCount. Tastes very fresh. It is from Bon Appetit, 1999, only I added three more ounces of tuna.

Ingredients
  • 9 ounces albacore tuna
  • 1/4 cup nonfat yogurt
  • 3 tablespoon low-fat mayonnaise
  • 1 teaspoon mustard
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon peel
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup cherry tomatoes
  • 1/2 cup chopped parsley
  • 15 ounces garbanzo beans

Directions: Mix yogurt, mayonnaise, mustard and lemon peel. Put tuna in a large bowl and drizzle lemon juice over it. Add yogurt dressing, vegetables and beans to tuna. Mix well. Refrigerate.
